- Cook the rice until tender.
- Cook the zucchini until crisp-tender.
- Place the cooked rice in a 3-quart casserole dish.
- Cover the rice with the diced chilies.
- Sprinkle half of the grated Jack cheese over the chilies.
- Layer the cooked zucchini over the cheese.
- Add sliced tomatoes over the zucchini and season with salt.
- In a bowl, combine sour cream, oregano, garlic salt, chopped green peppers, and chopped onion.
- Spread the sour cream mixture over the tomatoes.
- Scatter the remaining cheese over the top.
- Bake at 350°F (175°C) for 45 to 50 minutes.
- Sprinkle with chopped parsley before serving.
