Ingredients

  • 1 cup uncooked rice
  • 3 medium zucchini
  • 1 (7 1/2 oz.) can diced Ortega chilies
  • 12 oz. grated Jack cheese
  • 1 to 2 large tomatoes
  • 2 cups sour cream
  • 1 teaspoon oregano
  • 1/4 cup chopped green peppers
  • 1/4 cup chopped onion
  • 2 tablespoons chopped parsley
  • salt

Instructions

  1. Cook the rice until tender.
  2. Cook the zucchini until crisp-tender.
  3. Place the cooked rice in a 3-quart casserole dish.
  4. Cover the rice with the diced chilies.
  5. Sprinkle half of the grated Jack cheese over the chilies.
  6. Layer the cooked zucchini over the cheese.
  7. Add sliced tomatoes over the zucchini and season with salt.
  8. In a bowl, combine sour cream, oregano, garlic salt, chopped green peppers, and chopped onion.
  9. Spread the sour cream mixture over the tomatoes.
  10. Scatter the remaining cheese over the top.
  11. Bake at 350°F (175°C) for 45 to 50 minutes.
  12. Sprinkle with chopped parsley before serving.
