Ingredients

  • 2 1/2 cups oat bran cereal
  • 1/4 cup brown sugar
  • 1 tablespoon baking powder
  • 2 (8 oz.) cans crushed pineapple with juice
  • 2 egg whites
  • 2 tablespoons vegetable oil

Instructions

  1. Mix dry ingredients: oat bran cereal, brown sugar, and baking powder.
  2. Mix milk, one can of crushed pineapple with juice, egg whites, and vegetable oil in a separate bowl.
  3. Combine the wet ingredients with the dry ingredients and mix thoroughly.
  4. Add the second can of crushed pineapple and fold into the batter.
  5. Line muffin pans with paper baking cups.
  6. Pour the batter into the muffin cups.
  7. Bake at 425°F for 17 minutes.
