Ingredients

  • 1 can crushed pineapple (No. 2 1/2)
  • 1 package lemon jello
  • 1 package lime jello
  • 1/4 teaspoon salt
  • 1 cup dry cottage cheese
  • 1 cup mayonnaise
  • 1/2 cup chopped almonds

Instructions

  1. Drain syrup from pineapple.
  2. Add enough water to the syrup to make 2 cups.
  3. Heat the mixture to boiling point.
  4. Dissolve lemon and lime gelatin in the boiling liquid.
  5. Add salt to the mixture.
  6. Cool until slightly thickened.
  7. When beginning to congeal, fold in cottage cheese, mayonnaise, crushed pineapple, and chopped almonds.
  8. Pour the mixture into a mold or 9-inch square pan.
  9. Place in refrigerator to chill and set.
  10. Serve on a lettuce leaf, topped with a touch of mayonnaise.
