Ingredients

  • 1/2 cup shortening
  • 2 sticks margarine or butter
  • 2 3/4 cups sugar
  • 6 large eggs
  • 3 cups sifted all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 3/4 cup undrained pineapple with juice

Instructions

  1. Cream together the shortening, margarine or butter, and sugar until light and fluffy.
  2. Add eggs one at a time, beating well after each addition.
  3. Sift together the all-purpose flour and baking powder.
  4. Add the flour mixture alternately with the milk, a teaspoon at a time, mixing well after each addition.
  5. Stir in vanilla extract, undrained pineapple with juice, and blend thoroughly.
  6. Pour the batter into a well-greased and floured 10-inch tube pan.
  7. Place the pan in a cold oven and bake at 325°F (160°C) for 1 1/2 hours or until the top springs back when lightly touched.
  8. Remove from oven and let stand for a few minutes, then run a knife around the edge and carefully remove the cake to a cooling rack.
  9. Combine topping ingredients and pour over the hot cake while still warm.
