Ingredients

  • 2 cups sifted flour
  • 4 teaspoons baking powder
  • 1/3 teaspoon salt
  • 2 tablespoons sugar
  • 4 tablespoons shortening
  • 2 eggs
  • 1/2 cup crushed pineapple, drained
  • 1 tablespoon pineapple juice

Instructions

  1. Mix and sift dry ingredients; work in shortening with 2 knives.
  2. Add eggs well beaten, drained crushed pineapple, and pineapple juice if needed to make a soft dough.
  3. Turn the dough onto a floured board.
  4. Pat and roll the dough to 3/4 inch thickness, shaping as square and oblong as possible.
  5. Cut into triangle shapes.
  6. Brush the tops with reserved white of egg and sprinkle generously with sugar.
  7. Bake in a 450°F oven for 12 minutes.
