Sweet pineapple slices encased in a tender yeast dough, filled with luscious crushed pineapple and a hint of pineapple juice, perfect for a tropical-inspired dessert or brunch.

Ingredients

  • 3/4 cup scalded milk
  • 1 1/2 tablespoon sugar
  • 1 cake yeast
  • 2 1/2 cups flour
  • 1 cup butter
  • 3 egg yolks
  • 2 cans crushed pineapple
  • 3/4 cup pineapple juice
  • 3 tablespoon cornstarch
  • 3/4 cup sugar

Instructions

  1. Dissolve sugar and yeast in lukewarm milk; set aside.
  2. Sift flour and measure it.
  3. Add shortening as in pie crust; mix well.
  4. Add the cooled milk and beaten egg yolks to the flour mixture and mix into a dough.
  5. Divide the dough into two parts and roll each to fit a 12 x 14-inch pan.
  6. Spread the pineapple filling on the dough and let it rise for about 1 hour.
  7. Bake at 350°F for 45 minutes.
