Ingredients

  • 1 (8 oz.) can crushed pineapple in juice
  • 1/2 tsp. baking soda
  • 1 (2 layer) pkg. yellow cake mix
  • 4 eggs
  • 1 (4 serving) pkg. vanilla or pineapple instant pudding mix
  • 1/2 pt. sour cream
  • 1/4 cup oil

Instructions

  1. Combine crushed pineapple with juice and baking soda; mix well.
  2. In a large bowl, combine the yellow cake mix, eggs, pudding mix, sour cream, and oil.
  3. Add the pineapple mixture to the batter and mix thoroughly.
  4. Beat at medium speed for 4 minutes.
  5. Pour the batter into a greased and floured 10-inch tube pan.
  6. Bake at 350°F for 50 to 55 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool in the pan for 15 minutes.
  8. Remove from the pan and finish cooling on a wire rack.
