Stuffed oranges offer a delightful combination of sweet potato filling infused with vanilla and orange flavors, nestled inside fresh orange shells. Ingredients

  • 1 cup margarine
  • 1 large can sweet potatoes, drained
  • 4 large oranges
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups sugar
  • 3/4 teaspoon orange extract
  • miniature marshmallows
  • cherries
  • 2 eggs

Instructions

  1. Mash sweet potatoes, vanilla extract, sugar, margarine, eggs, and orange extract together; set aside.
  2. Cut oranges in half and remove the pulp, avoiding the veins.
  3. Mix the mashed potato mixture into the orange shells and fill them.
  4. Bake the stuffed oranges at 350°F for 20 to 30 minutes.
  5. Remove from oven, place miniature marshmallows on top, and add one cherry on each. Return to oven until the marshmallows are melted and lightly browned.
