Ingredients

  • 2 cups all-purpose flour, sifted
  • 1 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1 egg, well beaten
  • 1 cup sugar
  • 3/4 cup sour cream
  • 1 (8 oz.) can crushed pineapple, drained
  • 1 tablespoon pineapple juice from crushed pineapple
  • 1 cup chopped nuts
  • 1/2 cup shredded coconut

Instructions

  1. Combine flour, salt, and soda; set aside.
  2. Beat egg; beat in sugar.
  3. Stir in sour cream, crushed pineapple, and pineapple juice.
  4. Blend in the dry ingredients.
  5. Add chopped nuts and shredded coconut if using.
  6. Pour batter into a well-greased 9 x 5 x 3-inch loaf pan.
  7. Place in a cold oven, then turn heat to 350°F and bake for about 75 minutes or until done.
  8. Let stand in the pan for 5 minutes, then turn out onto a rack to cool.
  9. Freeze if desired.
