Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup chopped almonds
  • 3 eggs
  • 1 1/2 cups oil
  • 1 teaspoon almond extract
  • 2 cups bananas chopped
  • 1 (8 oz) crushed pineapple
  • Cream Cheese Frosting

Instructions

  1. Preheat oven to 325°F (163°C). Grease a Bundt pan.
  2. Mix flour, sugar, soda, salt, and cinnamon in a bowl.
  3. Stir in chopped almonds.
  4. Beat eggs slightly in a separate bowl.
  5. Combine oil, almond extract, chopped bananas, and undrained crushed pineapple.
  6. Add dry ingredients to the wet mixture and mix until just combined; do not beat.
  7. Spoon batter into the prepared Bundt pan.
  8. Bake for 1 hour and 20 minutes.
  9. Let the cake stand for 10 to 15 minutes after baking.
  10. Invert the cake onto a plate and let cool completely.
  11. Frost with Cream Cheese Frosting before serving.
