Ingredients

  • 1 1/2 c. Wesson oil
  • 3 3/4 Tbsp. hot water
  • 2 1/2 c. self-rising flour
  • 1 small can crushed pineapple
  • 4 egg whites
  • 2 1/4 tsp. cinnamon
  • 2 c. sugar
  • 4 egg yolks
  • 1 c. pecans
  • 1 1/2 tsp. nutmeg

Instructions

  1. Sift together the self-rising flour, cinnamon, and nutmeg.
  2. Mix all other ingredients except the egg whites and nuts.
  3. Add the nuts to the mixture and fold in the beaten egg whites gently.
  4. Pour the batter into a greased and floured tube pan.
  5. Bake at 350°F (175°C) for 1 hour and 15 minutes until a toothpick inserted into the center comes out clean.
