Ingredients

  • 4 cups flour
  • 2½ cups sugar
  • 4 teaspoons soda
  • 4 teaspoons cinnamon
  • 1 teaspoon salt
  • 4 cups grated carrots
  • 1 cup chopped pecans
  • 2 apples grated
  • 1 cup raisins
  • 1 cup coconut

Instructions

  1. Sift together flour, sugar, soda, cinnamon, and salt.
  2. Stir in grated carrots, chopped pecans, grated apples, raisins, and coconut.
  3. In a bowl, beat 6 eggs, then add 2 cups Mazola oil and 4 teaspoons vanilla.
  4. Stir in the flour and fruit mixture until combined.
  5. Spoon the batter into well-oiled muffin tins.
  6. Bake at 350°F for 20 minutes or until the muffin springs back when touched.
  7. Let cool for 5 minutes before removing from tins.
