- Combine sugar, water, egg whites, corn syrup, and salt in the top of a double boiler.
- Beat mixture at low speed for 1 minute or just until blended before placing over boiling water.
- Place the double boiler over boiling water.
- Beat at high speed for 7 minutes or until stiff peaks form.
- Remove from heat.
- Add peppermint extract and coloring.
- Beat at high speed for an additional 2 minutes or until thick enough to spread.
