Pink Peppermint Frosting

A fluffy, sweet pink peppermint frosting with a light, airy texture and refreshing peppermint flavor, perfect for decorating cakes and cupcakes for festive occasions.

Ingredients

  • 1 1/2 cups sugar
  • 2 egg whites
  • 1/8 teaspoon salt
  • 1/4 teaspoon peppermint extract
  • 1/2 cup water
  • 1 tablespoon light corn syrup

Instructions

  1. Combine sugar, water, egg whites, corn syrup, and salt in the top of a double boiler.
  2. Beat mixture at low speed for 1 minute or just until blended before placing over boiling water.
  3. Place the double boiler over boiling water.
  4. Beat at high speed for 7 minutes or until stiff peaks form.
  5. Remove from heat.
  6. Add peppermint extract and coloring.
  7. Beat at high speed for an additional 2 minutes or until thick enough to spread.
