Ingredients

  • 2 cups pinto beans
  • 1 teaspoon salt
  • 1 onion, chopped
  • 1/4 cup firmly packed brown sugar
  • 1/2 teaspoon dry mustard
  • 1/8 teaspoon marjoram
  • 5 cups water
  • 2 fresh pork hocks
  • 1 (8 oz.) can tomato sauce

Instructions

  1. Wash pinto beans and place in a large pot.
  2. Add water and bring to a boil for 2 minutes.
  3. Remove from heat and let stand, covered, for 2 hours.
  4. Drain and rinse the beans.
  5. Add fresh water to cover the beans again.
  6. Add 1 teaspoon of salt and the pork hocks to the pot.
  7. Bring to a boil, then reduce heat and simmer, covered, for 1 hour.
  8. Remove skin and bones from the pork hocks.
  9. Return the meat to the pot.
  10. Stir in 1/2 teaspoon of salt, chopped onion, brown sugar, dry mustard, marjoram, and tomato sauce.
  11. Simmer for 1 1/2 hours, stirring occasionally, until the beans are tender and flavors meld.
