Pinto Bean Pot

Instructions
- Wash pinto beans and place in a large pot.
- Add water and bring to a boil for 2 minutes.
- Remove from heat and let stand, covered, for 2 hours.
- Drain and rinse the beans.
- Add fresh water to cover the beans again.
- Add 1 teaspoon of salt and the pork hocks to the pot.
- Bring to a boil, then reduce heat and simmer, covered, for 1 hour.
- Remove skin and bones from the pork hocks.
- Return the meat to the pot.
- Stir in 1/2 teaspoon of salt, chopped onion, brown sugar, dry mustard, marjoram, and tomato sauce.
- Simmer for 1 1/2 hours, stirring occasionally, until the beans are tender and flavors meld.
