Ingredients

  • 4 eggs, separated
  • 1 c. boiling water
  • 1 1/2 c. sugar
  • 2 1/2 c. cake flour (scant)
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. vanilla
  • 1/2 tsp. lemon flavor

Instructions

  1. Beat egg yolks until fluffy and lemon colored.
  2. Gradually add the boiling water while beating, then blend in the sugar.
  3. Sift the cake flour with baking powder and fold into the yolk mixture.
  4. Beat egg whites stiff and add the 1/2 cup of sugar, then beat until glossy.
  5. Fold the beaten whites into the yolk mixture gently.
  6. Add vanilla and lemon flavorings, then pour batter into an ungreased angel food pan.
  7. Bake 30 minutes at 300°F, then 30 minutes at 350°F.
  8. Do not turn the pan upside down when finished.
  9. Cool on a rack before removing the cake from the pan.
  10. Serve with whipped cream or frosting if desired.
