Ingredients

  • 2 pkg. frozen chopped spinach, thawed
  • 3 or 4 eggs, beaten
  • 1 qt. buttermilk
  • 1 stick oleo or butter
  • 1 lb. cottage cheese
  • salt to taste
  • 2 c. cornmeal

Instructions

  1. Cook spinach in a pan over low heat with no water until wilted.
  2. Drain the cooked spinach thoroughly.
  3. In a mixing bowl, combine the drained spinach, cottage cheese, beaten eggs, 2 tablespoons of butter, and salt to taste.
  4. Mix all ingredients thoroughly until well incorporated.
