Ingredients

  • 1 pkg. active dry yeast
  • 1 tsp. sugar
  • 1 1/4 c. lukewarm water
  • 3 1/2 c. all-purpose flour (unbleached)
  • 1 tsp. salt
  • 1 Tbsp. olive oil
  • corn meal

Instructions

  1. Sprinkle yeast and sugar in lukewarm water; stir to dissolve.
  2. Set aside to proof.
  3. Measure flour and salt into a large bowl; make a well and stir in yeast mixture.
  4. Knead dough until it is smooth, which may be sticky at first.
  5. Use olive oil on hands to facilitate kneading.
  6. Knead dough for at least 10 minutes, until it is no longer sticky.
  7. Grease the top of the dough; turn dough to coat the surface.
  8. Cover the bowl; set aside for 1 hour to rise.
