Ingredients

  • 1/2 cup butter or margarine
  • 1 cup sugar
  • 2 eggs
  • 3/4 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 12 Italian prune plums
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

  1. Cream butter or margarine with 1/2 cup of the sugar.
  2. Beat in eggs, one at a time.
  3. Add almond and vanilla extracts.
  4. Beat well until mixture is smooth.
  5. Mix together flour, baking powder, and salt.
  6. Blend the dry ingredients into the creamed mixture.
  7. Spoon the batter into a greased round 9-inch cake pan 2 inches deep.
  8. Cut the plums in half and arrange them cut side down on top of the batter.
  9. Mix remaining 1/2 cup sugar with cinnamon and nutmeg.
  10. Sprinkle the cinnamon-sugar mixture over the plums.
  11. Bake at 400°F (200°C) for 30 minutes or until a toothpick inserted into the center comes out clean.
