Ingredients

  • 2 cups all-purpose flour
  • 2/3 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 cup quick cooking oats
  • 1 (16 oz) can purple plums, drained and chopped
  • 3/4 cup plum juice
  • 1 egg

Instructions

  1. In a mixing bowl, combine flour, sugar, baking powder, cinnamon, salt, and oats.
  2. Stir chopped plums in the flour mixture to coat well.
  3. Combine 3/4 cup plum juice, egg, and oil; add to the flour mixture, stirring just until dry ingredients are moistened.
  4. Pour the batter into a greased loaf pan.
  5. Bake in a preheated 350°F (175°C) oven for 1 hour, or until a toothpick inserted in the center comes out clean.
  6. Cool on a wire rack for 10 minutes.
  7. Remove from the pan and cool completely before slicing.
