Ingredients

  • 3 medium-sized Idaho potatoes
  • 1 egg
  • 1/3 cup flour
  • 2 tablespoons fine bread crumbs
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon minced parsley

Instructions

  1. Peel the potatoes, cook in boiling water until tender, then dry over heat and pass through a potato ricer.
  2. In a mixing bowl, combine the potato mash with beaten egg, flour, bread crumbs, salt, black pepper, and minced parsley.
  3. Mix until a soft dough forms.
  4. Divide the dough into portions and shape into dumplings.
  5. Bring a large pot of salted water to a boil.
  6. Cook the dumplings in boiling water until they float to the surface, about 3-4 minutes.
  7. Remove with a slotted spoon and serve hot.
