Ingredients

  • 3 Tbsp. butter or margarine
  • 1/4 c. flour
  • 1/4 tsp. salt
  • 1 c. chicken broth
  • 1 Tbsp. lemon juice
  • 1 Tbsp. parsley
  • 1 tsp. grated onion
  • 1 1/2 c. diced cooked chicken
  • 1 doz. tortillas
  • dash each: paprika, nutmeg and pepper

Instructions

  1. Melt butter; blend in flour and salt.
  2. Add broth.
  3. Cook and stir until thick.
  4. Add lemon juice, parsley, onion, paprika, nutmeg and pepper.
  5. Stir in chicken.
  6. Cool slightly.
  7. Warm tortillas until soft.
  8. Place 1 tablespoon of chicken mixture on each tortilla; roll and secure with toothpick.
  9. Fry in deep hot oil at 350° for 1 to 2 minutes, until crisp.
  10. Serve with guacamole.
