Pollo Relleno(Stuffed Chicken)
Ingredients
- 6 medium skinless, boneless halves (about 1 1/2 lb.) ⓘ
- 1/3 c. cornmeal ⓘ
- 1/2 (1 1/4 oz.) pkg. taco seasoning mix (2 Tbsp.) ⓘ
- 1 beaten egg ⓘ
- 1 (4 oz.) can whole green chili peppers, rinsed, seeded and cut in half lengthwise (6 pieces total) ⓘ
- 2 oz. Monterey Jack cheese, cut into 6 (2 x 1/2-inch) strips ⓘ
- 2 Tbsp. snipped cilantro or parsley
- 2 oz. Cheddar cheese or Monterey Jack cheese, shredded ⓘ
- 1/4 tsp. black pepper
- 1/4 tsp. crushed red pepper ⓘ
- 1 (8 oz.) green/red taco sauce ⓘ
Instructions
- Rinse chicken and pat dry.
- Place each breast half between 2 pieces of plastic wrap.
- Pound chicken with a meat mallet to 1/8-inch thickness.
- Remove plastic.
