Ingredients

  • 3 eggs
  • 2 cups sugar
  • 2 medium apples, peeled, cored and chopped
  • 1 cup shredded coconut
  • 1 cup chopped walnuts or pecans
  • 1 teaspoon cinnamon
  • 1 1/4 cups oil
  • 2 1/2 cups self-rising flour

Instructions

  1. Grease and flour a tube cake pan and preheat the oven to 350°F.
  2. Blend eggs, oil, and sugar until creamy; add flour a little at a time and mix well until batter is stiff.
  3. Fold in chopped apples, shredded coconut, and chopped nuts.
  4. Pour the batter into the prepared tube pan.
  5. Bake for 1 hour.
  6. Remove from oven and let cool for about 30 minutes before removing from the pan.
