Ingredients

  • 2 eggs
  • 1 can creamed corn
  • 3/4 cup milk
  • 1/2 cup salad oil
  • 1 cup quick grits hominy
  • 1 1/2 cups shredded sharp Cheddar cheese
  • 1/2 teaspoon soda
  • 1/2 teaspoon salt
  • Ortega chili peppers (about 1 dessert spoonful)
  • 1 1/4 cups unbleached white flour
  • 3/4 cup stone ground whole grain corn meal
  • 4 tablespoons sugar
  • 5 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 extra large egg

Instructions

  1. Preheat the oven and prepare a baking dish.
  2. In a large mixing bowl, beat the eggs.
  3. Add creamed corn, milk, salad oil, and mix well.
