- Preheat oven to 425° F.
- Grease a cookie sheet.
- In a large bowl, combine yeast and warm water; stir until dissolved.
- Add bran; let stand for 5 minutes to soften.
- In a medium bowl, combine 2 1/2 cups flour, sugar, and salt.
- Using a wooden spoon, stir into bran mixture until well combined.
- Gradually add remaining flour if dough is too sticky to handle.
- Place on a floured board; knead until smooth, about 1 to 2 minutes.
- Cover with a towel and let stand for 5 to 10 minutes.
- Divide dough into 12 pieces; roll each into 13-inch ropes.
- Form each piece into a pretzel shape.
- Place pretzels on the prepared cookie sheet.
- Brush lightly with beaten egg.
- Sprinkle with coarse salt.
- Bake for 12 to 15 minutes until golden brown.
