Ingredients

  • 5 eggs, separated
  • 4 Tbsp cocoa
  • 2 1/2 c sugar
  • 2 Tbsp flour
  • 1 1/2 tsp vanilla flavoring
  • 2 c evaporated milk
  • 1 c water
  • 3/4 box vanilla wafers

Instructions

  1. In a heavy boiler, combine flour, cocoa, sugar, egg yolks, milk, and water.
  2. Cook on medium heat until thickened, stirring constantly. Add 1 teaspoon vanilla flavoring.
  3. Place vanilla wafers in a 2 to 2 1/2-quart ovenproof bowl.
  4. Pour the cooked mixture over the vanilla wafers.
  5. Beat egg whites until stiff.
  6. Add 1/2 teaspoon flavoring and 1/2 cup sugar to the egg whites.
  7. Spread the meringue on top of the pudding.
  8. Bake in the oven until the meringue browns, watching carefully to prevent burning.
