Ingredients

  • 1 cup raisins
  • 2 cups water
  • 1 teaspoon soda
  • 2 rounded tablespoons shortening
  • 1 cup sugar
  • 2 cups flour
  • 1 teaspoon baking powder
  • pinch of salt

Instructions

  1. Cook raisins and water until reduced to 1 cup of juice; add soda and shortening while warm.
  2. Add sugar, flour, baking powder, and spices to the raisin mixture. Mix well to form a light batter.
  3. Pour the batter into a greased baking pan and bake at 350°F until done, about 35 minutes.
