Ingredients

  • 1 (1 lb.) pkg. pinto beans
  • 1 (3 lb.) pork loin roast
  • 1 (4 oz.) can green chilies
  • 2 Tbsp. cumin seed
  • 1 Tbsp. salt
  • 2 cloves garlic, chopped
  • 1 tsp. oregano
  • corn chips
  • shredded Cheddar cheese
  • shredded lettuce
  • chopped onion
  • diced tomato
  • 1 (7 1/2 oz.) jar jalapeno relish

Instructions

  1. Sort and wash beans.
  2. Combine beans, roast, chilies, cumin, salt, garlic and oregano in a large Dutch oven; cover with water. Cover and simmer 6 hours, stirring occasionally, adding water as needed.
