Ingredients

  • 1/2 cup Wish-Bone Italian dressing or Robusto Italian or Lite Italian
  • 1 1/4 cups pineapple juice
  • 1/2 cup firmly packed brown sugar
  • 3 tablespoons soy sauce
  • 6 center cut pork chops (about 1-inch thick, about 2 lb.)
  • 1 pineapple, crown, stem and rind removed and cut crosswise into 6 slices

Instructions

  1. In a dish, combine Italian dressing, pineapple juice, brown sugar, and soy sauce. Add pork chops and turn to coat.
  2. Cover and marinate in refrigerator, turning occasionally, for 3 hours or overnight.
  3. Remove chops from marinade.
  4. Bring marinade to a boil.
  5. Grill or broil pork chops, basting with marinade, until cooked through.
  6. Grill pineapple slices until caramelized and serve with pork chops.

Tips & Substitutions

For maximum flavor, marinate the pork chops overnight. If you prefer a sweeter glaze, add more brown sugar or use honey instead. Instead of pineapple slices, you can also grill peaches for a different flavor profile. If short on time, you can use a store-bought marinade such as Favorite Steak Marinade for a quick alternative.

Serving Suggestions

Serve the pork chops with a side of rice or a fresh salad like Carrot Choppers Salad for a balanced meal. The grilled pineapple adds a sweet contrast; consider pairing with a bold barbecue sauce. This dish also pairs beautifully with Rusty'S Texas Caviar for a festive touch.

Storage & Reheating

Store leftover pork chops and pineapple in an airtight container in the refrigerator for up to 3 days. To reheat, place in a preheated oven at 350°F until warmed through, or microwave in 30-second intervals until hot. Avoid reheating on high to prevent drying out the meat.

How can I make this recipe healthier?

What can I substitute for pineapple if I don't have any?
