Pork Chops Cacciatore features tender pork chops simmered in a flavorful tomato and spice sauce, topped with onions and green peppers, perfect for hearty, family-friendly dinners.

Ingredients

  • 6 pork chops (about 3/4-inch thick)
  • 1/2 tsp. salt
  • 6 thin onion slices
  • 1 envelope spaghetti sauce mix
  • 1 can tomatoes (2 cups)
  • 1 Tbsp. brown sugar
  • 6 green pepper rings

Instructions

  1. Trim fat from pork chops.
  2. Heat fat in a skillet; when about 1 tablespoon of fat has melted, remove trimmings.
  3. Brown the pork chops in the skillet, then season with 1/2 teaspoon salt and a dash of pepper.
  4. Place the browned chops in an 11 1/2 x 7 1/2 x 1 1/2-inch baking dish.
  5. Top each chop with a thin onion slice.
  6. In a bowl, combine the spaghetti sauce mix, canned tomatoes, and brown sugar; pour this mixture over the chops.
  7. Cover the dish with foil and bake in a moderate oven (350°F) for 1 hour.
  8. Uncover the dish and top each chop with a green pepper ring.
  9. Bake uncovered for an additional 15 minutes.
  10. Serve the pork chops hot with cooked rice.
