Double Duty Lasagna combines rich meat sauce, creamy cottage cheese, and gooey mozzarella in a satisfying layered dish perfect for family dinners or gatherings.

Ingredients

  • 8 oz. lasagna noodles
  • 1 lb. pork sausage
  • 1 lb. ground meat
  • 1 tsp. garlic, minced
  • 32 oz. spaghetti sauce
  • 12 oz. cottage cheese
  • 1 egg
  • 1 Tbsp. parsley
  • 8 oz. mozzarella cheese
  • 1/4 cup Parmesan cheese

Instructions

  1. Cook the lasagna noodles according to package instructions.
  2. Brown the pork sausage, ground meat, and minced garlic in a skillet.
  3. Drain excess grease from the meat mixture.
  4. Add spaghetti sauce to the meat mixture and simmer briefly.
  5. In a bowl, mix cottage cheese with the egg and parsley.
  6. Layer half of the cooked noodles in the bottom of each of two 8x8-inch baking dishes.
  7. Spread half of the cottage cheese mixture over the noodles in each dish.
  8. Sprinkle half of the mozzarella cheese over the cottage cheese layer in each dish.
  9. Add half of the meat sauce over the cheese layers in each dish.
  10. Repeat the layering process with remaining noodles, cottage cheese mixture, mozzarella, and meat sauce.
  11. Sprinkle Parmesan cheese over the top of each assembled lasagna.
  12. Bake at 375°F (190°C) for 15 to 20 minutes until bubbly and golden.
