Ingredients

  • 6 pork chops
  • 2 Tbsp. vegetable oil
  • 1/2 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1 (16 oz.) can tomatoes
  • 1 1/2 c. water
  • 1 c. rice
  • 3/4 tsp. salt
  • dash of pepper
  • 1 1/2 c. shredded Casino brand natural Monterey Jack cheese

Instructions

  1. In a large skillet, brown pork chops in vegetable oil. Remove chops and set aside.
  2. Saute onion and green pepper in the same skillet.
  3. Stir in tomatoes, water, rice, salt, and pepper; add the pork chops back into the skillet.
  4. Cover and simmer for 30 minutes or until the water is absorbed, stirring occasionally.
  5. Remove the pork chops and stir 1 cup of cheese into the rice mixture.
  6. Top the rice with the pork chops and sprinkle with the remaining cheese before serving.
