Ingredients

  • 6 to 8 pork chops
  • 1 Tbsp. oil
  • 1 onion, sliced
  • 2 cans tomato sauce
  • 2 c. water
  • 3 Tbsp. brown sugar
  • salt and pepper to taste
  • 2 c. Minute rice
  • 1 Tbsp. Worcestershire sauce

Instructions

  1. Spray a 9 x 13-inch pan with Pam and spread the uncooked Minute rice evenly in the bottom.
  2. In a skillet, cook pork chops in oil until browned on each side.
  3. Lay the browned pork chops on top of the rice in the prepared pan.
  4. In the same skillet, sauté sliced onion until softened.
  5. In a bowl, mix tomato sauce, water, brown sugar, salt, pepper, and Worcestershire sauce.
  6. Pour the sauce mixture over the pork chops and rice.
  7. Cover the pan with foil and bake at 350°F (175°C) for about 35-45 minutes until the rice is tender and the pork is cooked through.

Tips & Substitutions

To enhance flavor, consider marinating the pork chops in Worcestershire sauce before cooking. If you're out of minute rice, you can substitute with regular long-grain rice, but adjust the cooking time accordingly. For a little heat, add some crushed red pepper flakes to the sauce mixture. This dish is versatile and can be adapted like Best Ever Chili by adding beans or vegetables.

Serving Suggestions

Serve the pork chops over the rice with a side of steamed vegetables or a fresh salad for a balanced meal. A dollop of sour cream or a sprinkle of fresh parsley can elevate the dish. This meal pairs beautifully with Easy Hamburg Casserole for a hearty family dinner.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place in a microwave-safe dish and cover loosely with a damp paper towel to retain moisture. Heat in short intervals, stirring occasionally, until warmed through. This ensures the rice remains fluffy and the pork stays tender.
