Ingredients

  • 4 (3/4-inch) thick pork chops
  • 1/2 tsp. black pepper
  • 2 garlic cloves, minced
  • 2 c. thickly sliced mushrooms
  • 2 large tomatoes, peeled, seeded and diced
  • 1 large green pepper, cut into 1-inch pieces
  • 1/2 c. dry white wine or broth
  • 1 tsp. dried oregano leaves
  • 1/2 tsp. salt
  • 4 Tbsp. grated Parmesan cheese

Instructions

  1. Sprinkle chops on both sides with black pepper.
  2. Heat a heavy skillet over medium heat.
  3. Add pork chops and brown 5 minutes per side.
  4. Add minced garlic, sliced mushrooms, diced tomatoes, and green pepper pieces to the skillet.
  5. Place the browned pork chops on top of the vegetables.
  6. Pour dry white wine or broth over the chops and vegetables.
  7. Sprinkle dried oregano leaves evenly over everything.
  8. Cover the skillet and cook for 15 to 20 minutes until the pork chops are no longer pink and vegetables are crisp.
