  • 2 lb. fresh pork butt or shoulder, cut in pieces

  • 1 1/2 c. soup stock
  • 4 to 6 medium onions, chopped
  • 1 to 2 Tbsp. tomato puree
  • 2 tsp. paprika
  • 6 large or 12 small potatoes, peeled, cut, and parboiled
  • salt and pepper

Instructions

  1. Use cheaper cuts of meat and have the butcher bone and cut the meat into serving pieces.
  2. Combine the meat, onions, seasoning, and paprika in a heavy casserole and simmer, tightly covered, until the meat browns, turning occasionally.
  3. Dust the meat with flour, then add soup stock, tomato puree, and the parboiled potatoes.
  4. Cover and continue to simmer until the meat and potatoes are done, about 1 hour.
