Ingredients

  • 1 (9-inch) deep frozen pie shell
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1/2 pound bulk pork sausage
  • 1/2 cup herb-seasoned stuffing mix
  • 5 ounces frozen chopped spinach, thawed and well drained
  • 3 beaten eggs

Instructions

  1. Place the frozen pie shell on a baking sheet.
  2. Bake in a 400° oven for 5 minutes.
  3. Remove from the oven and reduce the temperature to 325°.
  4. Sprinkle the shredded Monterey Jack cheese in the bottom of the pie shell and set aside.
  5. In a skillet, cook the pork sausage until browned; drain off the fat.
  6. Stir in the herb-seasoned stuffing mix and thawed, drained spinach; spoon the mixture over the cheese in the pie shell.
  7. In a bowl, combine the beaten eggs with light cream.
  8. Pour the egg and cream mixture over the sausage, stuffing, and spinach filling.
  9. Bake uncovered in a 325° oven for 50 to 55 minutes or until a knife inserted in the center comes out clean.
  10. Let stand for 10 minutes before serving.
