Ingredients

  • 5 pieces bacon
  • 1 cup cornmeal
  • 1 cup flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 beaten eggs
  • 1/4 cup water
  • 1 can creamed corn
  • 1 1/2 cups shredded cheese
  • 1/4 cup oil or bacon grease
  • 2 or 3 tablespoons jalapenos

Instructions

  1. Preheat oven to 425°F. Mix cornmeal, flour, salt, sugar, and baking powder in a bowl.
  2. Add beaten eggs, water, and bacon grease or oil. Fold in creamed corn, cooked bacon, and half of the shredded cheese.
  3. Pour the batter into a greased 9-inch baking dish or pan. Sprinkle the remaining cheese on top.
  4. Bake for 40 minutes until golden and cooked through.
