Porter Chili

Ingredients

  • 2 lb boneless pot roast, cut into 1" cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 clove minced garlic
  • 1 large bell pepper, diced
  • 1 jalapeno pepper, diced
  • 3 tbsp chili powder
  • 2 tbsp smoked paprika
  • 1 tbsp red pepper flakes
  • 2 can fire roasted tomatoes
  • 1 can black beans, drained and rinsed
  • 2 tbsp tomato paste
  • 12 porter or similar dark beer

Instructions

  1. In large stock pot or dutch oven, heat oil over medium-high heat and add meat.
  2. Cook for about 2 minutes then add onions and continue to cook until meat is browned and onions or golden.
  3. Add garlic, peppers, chili powder, paprika, and pepper flakes.
  4. Stir until spices become fragrant.
  5. Add the rest of the remaining ingredients and stir to combine.
  6. Cover and simmer over low heat for at least 1 hour, until the beef is fully tender.
