Ingredients

  • 2 lb. yellow squash, sliced
  • 2 eggs
  • 1 cup mayonnaise
  • 1 small onion
  • 1/4 cup green pepper, chopped
  • 1 cup grated Parmesan cheese
  • salt and pepper to taste

Instructions

  1. Cook the sliced yellow squash until tender.
  2. Drain well and let it cool slightly.
  3. Beat the eggs in a bowl.
  4. Add mayonnaise, chopped onion, chopped green pepper, grated Parmesan cheese, salt, and pepper to the eggs and mix well.
  5. Pour the mixture into a buttered baking dish.
  6. Dot with butter or top with bread crumbs if desired.
  7. Bake at 350°F (175°C) for 30 minutes until golden and bubbly.
