Ingredients

  • 1 1/2 cups sugar
  • 1/2 cup shortening
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup mashed bananas
  • 1/4 cup buttermilk
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups flour
  • 1/2 to 1 cup nuts
  • 1 box banana instant pudding

Instructions

  1. Mix eggs, sugar, and shortening together until well combined.
  2. Add vanilla, mashed bananas, buttermilk, and baking soda; mix well.
  3. Add flour, salt, baking powder, and nuts; beat until fluffy.
  4. Pour batter into a greased 9 x 13-inch pan and bake at 350°F for 30 to 35 minutes.
  5. Allow the cake to cool completely.
  6. Prepare the banana instant pudding according to the box instructions.
  7. Spread the pudding over the cooled cake.
  8. Top with whipped cream or Cool Whip.
