Posole Stew

Ingredients

  • 1 c. hominy, yellow, dry (posole)
  • 28 oz. tomatoes, crushed
  • 8 oz. green chilies, chopped
  • 2 cubes vegetable bouillon
  • 1/4 c. cilantro, chopped
  • 1 Tbsp. tabasco sauce
  • 1 whole chipotle pepper, dried, optional
  • dash oregano
  • salt, to taste

Instructions

  1. Soak posole overnight in water.
  2. Rinse soaked posole with fresh water, set aside.
  3. Put tomatoes and chiles in a large pot. Dissolve bouillon in 2 cups hot water, add to pot.
  4. Put posole and rest of ingredients in pot.
  5. Cook over medium heat for 2 to 2 1/2 hours.
  6. Stew is ready when posole in tender.
  7. A can of cooked hominy can be substituted for the posole to make this dish much quicker.
  8. Do not drain the hominy.
