Potato Basque Soup
A hearty Basque-inspired potato soup with spicy sausage, tender potatoes, and fresh herbs, perfect for comforting meals and gatherings with bold flavors and satisfying textures.
Ingredients
- 1 lb. Italian sausage or Spanish chorizo, sliced ⓘ
- 1/2 c. chopped onion ⓘ
- 2 c. tomatoes ⓘ
- 4 potatoes, pared and diced ⓘ
- 1/4 c. chopped parsley ⓘ
- 1 c. diagonally sliced celery ⓘ
- 2 Tbsp. chopped celery leaves ⓘ
- 1 1/2 c. water
- 2 beef bouillon cubes ⓘ
- 1 bay leaf ⓘ
- 1 tsp. salt ⓘ
- 1/2 tsp. dried leaf thyme ⓘ
Instructions
- In a large saucepan, brown sausage over medium heat.
- Add chopped onion and cook for 5 minutes.
- Add tomatoes, diced potatoes, chopped parsley, sliced celery, chopped celery leaves, water, beef bouillon cubes, bay leaf, salt, and thyme.
- Bring the mixture to a boil.
- Reduce heat and simmer, uncovered, for 40 minutes or until potatoes are tender.
