Ingredients

  • 6 medium potatoes, cooked and diced
  • 1 cup fresh whole dill pickles, coarsely chopped
  • 1/2 cup chopped onions
  • 1/2 cup mayonnaise or salad dressing
  • 1 (15 oz) can pork and beans
  • salt

Instructions

  1. Toss cooked and diced potatoes, chopped pickles, and chopped onions together in a large bowl.
  2. Mix the pork and beans with mayonnaise or salad dressing until well combined, then pour over the potato mixture.
  3. Gently toss all ingredients until thoroughly blended. Taste and add salt if necessary.
  4. Chill the salad well, preferably overnight for best flavor.
  5. Before serving, garnish with additional pickles or chopped parsley.
