- In a small saucepan, heat the reserved potato water to 120° to 130° Fahrenheit.
- In a large mixing bowl, combine 3 1/2 to 4 cups of flour, dry yeast, sugar, and salt.
- Add the cooked, mashed potato, cooking oil, and the warm potato water to the dry ingredients.
- Mix until a soft dough forms, then knead until smooth and elastic, about 8-10 minutes.
- Cover the dough and let it rise in a warm place until doubled in size, about 1 hour.
- Preheat oven to 375°F (190°C).
- Punch down the dough and divide into equal portions.
- Shape each portion into a long stick or oval shape.
- Place the shaped dough on a greased baking sheet.
- In a small bowl, beat the egg white with 1 tablespoon of water, then brush over the bread sticks.
- Sprinkle toasted sesame seeds evenly over the top.
- Bake in the preheated oven for 15 minutes or until golden brown.
- Serve warm or at room temperature.
