Ingredients

  • 1 medium potato, washed, cooked, peeled and mashed
  • 2/3 cup potato water
  • 3 1/2 to 4 cups flour
  • 1 package dry yeast
  • 1/4 cup cooking oil
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 egg white
  • 1 tablespoon water

Instructions

  1. In a small saucepan, heat the reserved potato water to 120° to 130° Fahrenheit.
  2. In a large mixing bowl, combine 3 1/2 to 4 cups of flour, dry yeast, sugar, and salt.
  3. Add the cooked, mashed potato, cooking oil, and the warm potato water to the dry ingredients.
  4. Mix until a soft dough forms, then knead until smooth and elastic, about 8-10 minutes.
  5. Cover the dough and let it rise in a warm place until doubled in size, about 1 hour.
  6. Preheat oven to 375°F (190°C).
  7. Punch down the dough and divide into equal portions.
  8. Shape each portion into a long stick or oval shape.
  9. Place the shaped dough on a greased baking sheet.
  10. In a small bowl, beat the egg white with 1 tablespoon of water, then brush over the bread sticks.
  11. Sprinkle toasted sesame seeds evenly over the top.
  12. Bake in the preheated oven for 15 minutes or until golden brown.
  13. Serve warm or at room temperature.
