Ingredients

  • 1 medium potato
  • 2 Tbsp butter
  • 3/4 cup sugar
  • 1/8 tsp salt
  • 2 eggs, separated
  • 1/2 cup milk
  • juice and grated rind of 1/2 lemon
  • plain pie pastry

Instructions

  1. Boil the potato until tender.
  2. Mash the boiled potato.
  3. Add butter, sugar, and salt to the mashed potato and stir until creamy.
  4. Allow the mixture to cool.
  5. Add beaten egg yolks, milk, lemon juice, and lemon rind to the cooled mixture and mix well.
  6. Fold in stiffly beaten egg whites.
  7. Pour the mixture into a prepared pie pastry shell.
  8. Bake at 400°F (200°C) for 25 minutes or until set and golden.
