Ingredients

  • 1 small head cauliflower
  • 2 eggs
  • 1/4 cup milk
  • 1 cup flour
  • 1 teaspoon grated Romano or Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Separate cauliflower into florets and wash them.
  2. Boil the florets until just tender, then drain.
  3. In a deep bowl, beat the eggs.
  4. Add milk, flour, grated Romano or Parmesan cheese, salt, and black pepper to the eggs and mix until smooth.
  5. Dip each cauliflower floret into the batter, coating well.
  6. Heat oil in a frying pan.
  7. Using a large spoon, scoop up the battered florets and carefully drop them into hot oil.
  8. Cook until golden brown, turning to brown evenly.
  9. Remove the cauliflower puffs and drain on paper towels.
  10. Serve while still warm.
