Ingredients

  • 3 potatoes
  • 1/3 small onion
  • 3 egg whites
  • 1/4 tsp. pepper
  • drops of red pepper sauce
  • 1/2 tsp. low-sodium baking powder

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Grate the potatoes and combine with egg whites, pepper, red pepper sauce, and baking powder.
  3. Using a nonstick muffin pan, evenly distribute approximately 1/3 cup of the mixture into each cup.
  4. Bake in the preheated oven for 20 minutes.
  5. Reduce the temperature to 350°F (175°C) and continue baking until lightly browned, about another 20 minutes.
