Ingredients

  • 3 lb. potatoes
  • 8 oz. sharp Cheddar cheese, shredded
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 cup butter or margarine
  • 6 cups sliced onions
  • 1 (12 oz.) box jumbo shells

Instructions

  1. Cook potatoes until tender, then drain and return to the pot.
  2. Add shredded Cheddar cheese to the potatoes and mash until the cheese melts.
  3. Stir in salt and pepper to taste.
  4. Melt butter in a large skillet over medium heat.
  5. Add sliced onions and cook for 10 to 15 minutes, stirring occasionally, until tender but not browned.
  6. Cook jumbo shells according to package instructions, then drain and cool under cold water.
  7. Fill cooked shells with the mashed potato and cheese mixture.
  8. Serve the shells topped with cooked onions.
