Potato Magics are crispy, golden mini potato puffs with savory onion flavor, perfect as an appetizer, snack, or brunch side for versatile gatherings.

Instructions
- Place quartered potatoes in a large saucepan; add water to cover.
- Heat to boiling, then reduce heat and simmer over medium heat for 25 to 30 minutes or until potatoes are tender.
- Drain water, mash potatoes, and allow to cool.
- Saute chopped onions in olive oil until clear.
- Add onions, cracker or bread crumbs, salt, and pepper to the mashed potatoes and remash them.
- Coat a cookie sheet with nonstick vegetable cooking spray.
- Roll the mixture into balls with your hands and place the balls on the prepared cookie sheet.
- Brush the balls with beaten egg yolks.
- Bake until crusty brown, about 45 minutes in a 400°F oven.
