Potato Magics are crispy, golden mini potato puffs with savory onion flavor, perfect as an appetizer, snack, or brunch side for versatile gatherings.

Ingredients

  • 3 lb. potatoes, peeled and quartered
  • 1 c. onions, chopped
  • 3 Tbsp. olive oil
  • 1 c. cracker or bread crumbs
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 2 egg yolks, beaten

Instructions

  1. Place quartered potatoes in a large saucepan; add water to cover.
  2. Heat to boiling, then reduce heat and simmer over medium heat for 25 to 30 minutes or until potatoes are tender.
  3. Drain water, mash potatoes, and allow to cool.
  4. Saute chopped onions in olive oil until clear.
  5. Add onions, cracker or bread crumbs, salt, and pepper to the mashed potatoes and remash them.
  6. Coat a cookie sheet with nonstick vegetable cooking spray.
  7. Roll the mixture into balls with your hands and place the balls on the prepared cookie sheet.
  8. Brush the balls with beaten egg yolks.
  9. Bake until crusty brown, about 45 minutes in a 400°F oven.
