Ingredients

  • 2 eggs
  • 1 cup mashed potatoes
  • 1/2 cup flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • oil for deep fat frying

Instructions

  1. In a mixing bowl, beat the eggs.
  2. Add the mashed potatoes to the eggs and mix well.
  3. Combine the flour, baking powder, and salt in a separate bowl.
  4. Stir the dry mixture into the potato and egg mixture until well combined.
  5. Heat about 1 inch of oil in a large saucepan or kettle to 375°F (190°C).
  6. Drop heaping teaspoonfuls of the mixture into the hot oil, 4 or 5 at a time.
  7. Fry for 2 to 3 minutes, turning once, until golden brown.
  8. Remove the potato puffs and drain on paper towels.
  9. Serve immediately.
